I was bored and thought I’d use up this can of Black-Eyed Peas that I’ve had in my cabinet forever. I just threw together some ingredients that I had on hand. It turned out pretty good.
1 can black-eyed peas, 1/8th cup liquid reserved
1 tbsp tahini
1 tbsp lemon juice
1/2 tbsp olive oil
several dashes hot sauce (i used a lot, I like spicy)
1/2 tsp cumin
1/4 tsp garlic powder
1/4 tsp salt
Mix in food processor. This makes about 10 servings, 55 cals each.
